Whether you're sipping a cappuccino in a piazza, enjoying a plate of carbonara in a trattoria, or cheering on AS Roma at the Stadio Olimpico, you'll feel the city's heartbeat and understand why it's been a cultural capital for centuries.

Be sure to try some “Tonnarelli Cacio E Pepe” (pasta with cheese sauce) . The amazing thing about Cacio e Pepe is how simple the ingredients are... but how hard it is to make well!
Carciofi alla Giudia, is one of Rome’s traditional dishes. It’s essentially the best deep fried artichokes you’ll ever try.
Gelato, gelato, gelato !, You can find amazing natural ice cream in rome, Avoid any places with bright, unnatural colors on display (make sure the pistachio color should be light brown).
Porchetta , found in delis and markets around town, por- chetta is a delicious pork roast that is also the key ingre- dient in some of the city’s best sandwiches
Saltimbocca, is a typical secondo (main dish) is juicy and delicious. Hearty slices of veal are topped with prosciutto crudo and fresh sage.
Trippa Alla Romana, feeling adventurous? is today a staple of roman cuisine. The dish is prepared with tripe, white onions, peeled tomatoes, carrots, white wine, Pecorino Romano cheese and pennyroyal leaves

For early starters (6AM only), visit the Vatican Museum and sistine chapel “out-of-hours” private tour. Discover the sistine chapel with no one else. This is a once-in-a-lifetime experience and it does begin quite early in the morning. (Subject to availability/ 20 people max can be done on day 5 for the other half of the group.)
